A day of rest!
We woke up at 7:30 which is LATE for us on any given day. We voted to stay at home today, since we both had a non-stop type of week. Randy had to go out of town twice to help set up for the KEAN Big Bass Bonanza (does that sound redneck or what?) at a lake near Breckenridge. As usual, he has taken care of just about all the domestic chores around the house, while I type, listen, type, listen, type in the back office, which coincidentally is the hottest room in the house–even in late September. Something’s going to have to change when I actually start working at home.
We got our flu shots about 2 weeks ago, so the immunity should just be kicking in about now. Hopefully, we won’t be exposed to a different strain not included in the vaccine. After the bout of flu we had several years ago (ill at the same time), we swore we would never skip the flu shot again. I’m allergic to egg whites, so I’m really not supposed to take it, but I’ve never had a reaction…so I lie about it so they’ll give it to me. LOL I usually take a Claritin beforehand as prevention.
In anticipation of winter, we got a cord of mesquite wood. It’s hard to think about fireplaces when it’s still 90 degrees out, but I love being prepared for that first really cold night! It is soooo relaxing to have a roaring fire after a long, hard day battling it out at the office.
Although I’m probably going to cause us to starve to death once I quit my full-time salaried job to do M.T., I know God will provide. He always has. We are trying to put a nest egg together as we go, so when my income plummets it won’t be a total disaster. I am ready to face the challenge and risk, just to preserve my sanity.
Hard to believe, but tomorrow is mine and Randy’s 19th wedding anniversary. (And they said it wouldn’t last…LOL) What a blessing this life of ours has been. Yes, we’ve had our ups and downs, but nothing we couldn’t get through together. Randy is definitely my gift from Heaven.
We’re going to make our favorite pasta dish for lunch. Recipe is below. It’s very simple, yet delicious. Following that will be the Dallas Cowboys at noon, and my Sunday chat at 1 pm.
Sometime this afternoon, we’re going to have queso and chips. It’s cloudy and rainy-looking outside. I love days like this!
Well, I’ve rambled on long enough I guess…but I knew I wouldn’t be blogging again for awhile. I’m just too drained at the end of work and the M.T. course during the week. Oh, by the way, I transcribed 9 reports yesterday!

SPAGHETTI WITH MUSHROOMS, OLIVES & SAUCE – from Pasquale’s Kitchen Express Cookbook
3 tbsp oil
4 oz chicken broth
1/2 onion, chopped
pinch of Basil
1 garlic clove, minced
6 large mushrooms, thinly sliced
1/2 green (bell) pepper, diced
1 cup peeled tomatoes
1 tbsp tomato paste
4 oz red or white wine
pinch of chili pepper
salt & pepper
1 cup of green olives, chopped
4 tbsp of grated Parmesan cheese
chopped parsley (optional)
In a large fry pan, heat oil and saute onion, garlic, mushrooms and pepper until light brown. Add other ingredients except cheese and parsley, and simmer 12 to 15 minutes. Drain pasta, toss with sauce, cheese & parsley, and serve!
Okay, you’re going to have to enlighten me. (And remember I used to work at KEAN yeeeeaaaarrrrrrssssss ago).
Randy is helping set up for the Bass Classic? Does the same company that owns KEAN own his radio station as well? Or was he just wanting to hang out with “Fearless” Rudy Fernandez? :music:
They’re all in the same building (KEAN building) and now owned by Gap Broadcasting. Clear Channel just sold to them a few months ago.
Oh wow. I knew Clear Channel was selling off some of their radio stations and um………..(how do I put this nicely) doing some creative bookkeeping to make the stations look more lucrative (firing people, etc).
