Chillin’ with Chili

It’s a perfect fall day. Sunshine and crisp, cool (dare I say cold?) air. Leaves on the ground, having finally given up on summer. Oh, and let’s not forgot CHILI! Oh yeah, babe.

Last night, Randy made some Cin Chili. Let me tell you, this was awesome! Cindy, the lady who sells this packet of her championship seasoning blend has won many Terlingua, Texas, chili cookoffs. This is one of the most competitive cook-offs in the nation. She has also been on the Bobby Flay Challenge, in which there was a “tie.” Afterward, Bobby stated he will not “allow” a tie again. Hmm. Sounds like the voice of defeat to me. Even a foodie who believes that fresh is best (which is true), would not believe how wonderful this chili is. It meets all the criteria for judging chili: taste, texture, aroma, aftertaste, and color. Throw some Colby-Jack cheese and some jalapenos on, eat with Club crackers, and it’s HEAVEN!

There is definitely Frito Pie in my near future. Leftover chili is even better, and this is my favorite way to consume it. Gee, I wonder why I’ve only lost 3 pounds. I am DOOMED!

    Oh MAN! That’s not fair! I get up this morning and read this…now I’m so hungery! Fixing a one skillet breakfast with fried (in olive oil) yukon gold potatoes, diced onion and green/red pepper, egg, etc. Have a great Sunday!
